So, why are hard-boiled eggs hard to peel? The fresher (or newer) the egg is, the harder it is to peel after boiling it. There’s an air pocket inside the large end of the shell between the shell membranes. At first it’s not very big. As the egg gets older, this air pocket gets bigger and the shell becomes easier to peel.
